The Neapolitan coffee: method and machine

Neapolitan coffee
This method involves using a special tin coffeepot called "Neapolitan", consisting of two cylinders separated by a filter basket where you place the coffee. The basket of the Neapolitan machine has to be filled with finely dark roasted ground coffee; water should be poured into the bottom of the machine.

The section of the coffeepot with the water inside is in contact with the fire. When the water is boiling the Neapolitan machine can be removed from the heat and quickly reversed to allow hot water to filter into the filter basket. The hot water passes through the coffee powder (extracting aroma, taste and smell) and collects into the container provided with a spout. At this point the coffee can be served.

But nowhere on the Internet that I have seen, does anyone say that when you 'flip' the pot, if it is done without the correct action then boiling water spouts from the small expansion hole near the lip of the lower (boiling) container either over your cooker or kitchen surface, or if held especially incorrectly, your fingers!

Be warned, approach with caution. Handled correctly and with good quality grounds, this pot produces a rich and rewarding cup of coffee.
