Coffee with or without sugar? This is the problem ...

Coffee purists say that the amount of sugar that is consumed for drinking an espresso coffee is inversely proportional to the quality of the espresso.
In reality, sweetening, is essential to the large majority (over 80%) of population to fully enjoy the pleasure of an espresso coffee. The taste of sweet, unlike what is commonly thought, is not the inverse of the bitter taste (if that were the case there would be a point of equilibrium in which neither of the two flavours would feel). Therefore the sugar into the espresso is consumed not only to oppose the bitterness, but also for other sensory positive effects since sugar increases the body and the sensation of fullness of coffee, increases the persistence of aromatic sensations, and allows the emergence the floral and fruity.
In short: people used to drink coffee with sugar please continue to do so quietly … and not move to drink it without sugar only for being considered a coffee
