It is important to know what kind of coffee they are serving us at the coffee shop so that we can immediately know whether the establishment we stopped by is serving us at its best or not. In coffee, depending on the color it shows in the cup, it can be made: artful, under extracted, over extracted.

Artful coffee (left image)
It has a cream shaded from hazelnut to reddish hazelnut, sometimes with dark brown streaks. The thickness of the cream should be 2 to 3 mm, and this should remain for a long time. Aromatic body, dense, full, sweet and fragrant. It has a long persistence on the palate.

Coffee over extracted (center image)
The foam is dark brown with white button or spot in the middle. It has little thickness and tends to recede rapidly toward the rim forming a black ring. The taste is bitter, strong, woody astringent and has very little aroma.

Coffee under extract (right image)
The foam is clear, broad-mesh, with little thickness, which tends to disappear quickly. Non-existent body, little aroma, light.
