On January 27, 2011,Alce Nero Bio Caffè opened in Bologna, an eatery that makes "no waste" and conservation of natural resources a philosophy of life. In fact, this café offers:

- Strictly organic products
- Direct contact between producers and customers to lower the prices of goods for sale
- Strictly aqueduct and filtered water
- Minimized use of disposable and single-serving products
- Placemats and napkins made of recycled paper
- Interiors made of natural materials such as wood, jute and wicker

The restaurant adheres to a number of good practices aimed at energy conservation, waste sorting, waste reduction and full utilization of food: most commendably, leftover food is recovered every day to prepare about 75 meals offered at St. Cecilia's soup kitchen to the city's poor.

Zero Waste activities include insulating the building with interior insulation and double-glazed insulation against heat loss, use of energy-efficient lamps and appliances.

In conclusion, it is not surprising if you sometimes see a customer come out with a paper bag in his hand: this is the famousadoggybagwhichhas always had little success here in Italy...maybe with the anti-waste philosophy it will catch on as a habit at the end of the meal.
