Coffee Tagliatelle, an unusual but original recipe:
Ingredients for 4 people:
- 250 g flour
- 2 eggs
- 20 ml extra virgin olive oil
- a pinch of salt
- 3 cups of coffee
- water to taste
- 250 g cream
- 50 g butter
- chopped chives
Procedure:
Pour the flour onto the work surface forming a fountain.
Add the eggs, oil and salt and mix first with a fork then with your hands starting to knead. Add the coffee a little at a time. Add, if necessary, a little water so that the dough is elastic. Roll out the dough and cut out the noodles.
Boil them in plenty of salted water and in the meantime prepare the sauce for seasoning by slowly melting the butter and adding the cream so as to thicken the sauce well.
Adjust the salt and freshly ground pepper.
Drain the noodles, toss with the cream sauce, give them a good stir and serve immediately, sprinkling with the chives.
