Real Mexican coffee(cafe de olla) comes from a caliente land, however, it can also adapt well to the autumn weather knocking at the door since it is a beverage flavored with spices and bitter chocolate (such coffee should not be confused with cafe mexicano, a drink very similar toIrish Coffee that is prepared with kalua, tequila and cream).

It is prepared by boiling water in a crock pot(olla in Mexican) to which is then added cinnamon sticks, cloves, crumbled chocolate and Mexican brown sugar(piloncillo). When it comes to a boil again, the coffee powder should be poured in and everything mixed well. At this point the heat is turned off and the infusion is allowed to rest for about three minutes.Now simply strain the infusion and serve it hot in crock cups, accompanying each cup with a cinnamon stick instead of a teaspoon to adorn it.

Ingredients:
750 ml water
50g coffee
50g Mexican brown sugar(piloncillo)
25g bitter chocolate
1 4-cm cinnamon stick
1 clove
