Variety of milk
For the making of special cappuccinos we can use any type of milk on the market, however, it is recommended to use fresh whole milk for better performance in the cup, as the fats contained in the milk give a better taste, as well as greater persistence of the cream. It should also be remembered that it is not the fats in milk that form the cream, but rather the proteins contained in it.
Milk jugsto be used

Whipping milk
Always use milk at a temperature between 0 and 4 degrees, never previously heated. Fill the milk jug to about half its capacity, purge the steamer and insert the lance just below the milk level: at this point open the steamer and for greater temperature control rest your hand on the milk jug or equip yourself with a thermometer. Slightly lower the creamer to bring the lance to the level of the milk to allow more air to enter, which will create the cream: this should reach a volume of 20 percent of the poured milk. Always perform this operation in the shortest possible time without ever exceeding 65 degrees celsius
Decorations: practical rules
Before starting decorations rotate the creamer to keep the cream and milk well mixed at all times.
Decorations should be made immediately after the milk has been whipped as the cream will be the most compact. It is possible to increase the color contrast with a simple dusting of cocoa over the coffee.
