This method of coffee brewing involves using a special tin coffee maker called a "napoletana," which consists of two cylinders divided by a basket filter where the coffee is placed. The basket of the Neapolitan machine should be filled with dark roasted and finely ground coffee, and water should be poured into the lower part of the machine.
The section of the machine with the water in it is in contact with the fire and the liquid is brought to a boil. At this point the Neapolitan machine should be removed from the fire and quickly turned over to allow the hot water to seep into the basket, pass through the coffee powder (extracting its aroma, taste, and fragrance) and collect in the container with the spout. At this point it is enough to serve.
