A few simple steps are needed to prepare this succulent recipe:

1) Separately prepare a salad where the radicchio tips, curly lettuce, basil florets and celery cut into sticks are to be mixed.
2) Separately incorporate an espresso coffee to the mascarpone cheese, season it with salt and pepper and work it all together with a wooden spoon until homogenizing what will be the filling for the ravioli.
3) Now you must roll out the white dough to a thin thickness and begin to prepare the ravioli using the mascarpone filling prepared earlier.
4) Put the bread on the grill, cut each slice into a triangle shape and spread with the coffee jam.
5) Scald the ravioli in salted water and pan-fry them with butter and parmesan
6) Heat some oil, season it with a pinch of salt, add 1 well-cold espresso coffee and whisk until a frothy emulsion is obtained.

Now lay the ravioli on a plate, arrange the salad and previously prepared croutons next to it, and drizzle everything with the oil and coffee emulsion
